Back in 2017, I was consulting for a family restaurant in Bangkok. They were busy every night, customers loved the food, but somehow they were always tight on cash. Sound familiar?

The problem wasn't their business model. It was that they had no real visibility into where their money was going. Food costs were eating into profits, labor scheduling was based on guesswork, and they had no idea which menu items actually made them money.
